Boerenmeisjes, (literally 'Farm Girls') or brandied apricots are often served in a champagne coupe during special occasions such as births. It is a traditional recipe from Groningen province. Boerenmeisjes is also a great topping for ice cream or pancakes. Boerenjongens ('Farm Boys') is a similar recipe using raisins instead of dried apricots. The fruits must steep for at least six weeks, though the longer the better. Once opened, store the jar in the fridge for about one month.
Makes: 34 Fl. Oz (1 liter).
Ingredients:
- 2 ½ cups water
- 1 cup sugar
- 1 ¾ cups dried apricots
- Rind of ½ untreated organic lemon
- 1 vanilla pod, split down the middle
- 1 cinnamon stick
- 2 cups brandy
Preparation:
- Bring the water to the boil in a small saucepan, and stir in the sugar and apricots.
- Lower the heat, place a lid on the pan, and allow the apricots to gently simmer for 10 minutes.
- Transfer the mixture to a sterilized jar that holds 1 liter, and add the rest of the ingredients.
- Turn the closed jar a few times to combine, and allow to steep for at least six weeks before enjoying.
